The defender was drafted alongside teammates Darren Kowal and Jason Norrish after playing in a strong Claremont side. Gilbert opted to spend another year in Perth, signing with Melbourne in early 1992 on the understanding that he wouldn't be available until 1993. That year he was picked in the Western Australian state squad.

Gilbert moved to Victoria in 1993 and played the majority of his first season, but struggled to hold a position in 1994. When Fremantle joined the competition in 1995, his old Claremont coach Gerard Neesham traded one of the Dockers' Western Australian zone selections for Gilbert. The player he swapped was Jeff Farmer, who played his best seasons in Melbourne, and didn't join Freo until years after Neesham's departure.

Gilbert appeared just 14 times for the Dockers before being delisted in 1996. He returned to Claremont for two seasons before becoming Peel Thunder's inaugural captain in 1997. He served in that role until the end of 1998 and worked under Garry Hocking as an assistant coach at the Thunder in 2004.
