An All-Australian high school and Under 18 player who saw his stocks rise even further after a 36 possession game in the 2005 TAC Cup Grand Final, Jones broke into the Demons senior side late in 2006 and maintained his spot right throughout the finals, earning a Rising Star nomination along the way. After the Demons were eliminated Jones returned to the Sandringham and played in their premiership side.

Now a fully established member of the Demon midfield, Jones played 21 games in 2007, earning a second rising star nomination and averaging five tackles a game. Despite the side losing ground on the field and finishing third last Jones finished third overall in the Rising Star award and was second in the Demons' Best and Fairest count.

In the 2008 wooden spoon campaign Jones played 21 games and established himself as one of his side's stars in a disappointing year. 2009 was another consistent season, and with 20 games for the year he was once again one of the better performers in a wooden spoon side. After the Round 2 match against Collingwood Jones' father was attacked by Magpies fans in an altercation outside the ground.

Jones was one of only two Demons to play every game in 2010. Despite being the first time he had played a complete season, the nuggety midfielder struggled at times and late in the year was given a series of tagging roles. Rumours linked him to an end of year trade, possibly to Essendon but he was rewarded with a new contract which tied him to the club until the end of 2012.

He once again played every game in 2011, kicking a career high 14 goals and establishing himself in the Demon midfield. It provided a platform for his career best season in 2012, where he missed just one match and was his side's dominant midfielder despite the team crashing to just four wins for the year. Five years after finishing second in the Best and Fairest in his second senior season Jones finally won the award.

In May 2013 Jones was appointed caretaker captain in the absence of the injured Jack Grimes, and as the club's most consistent midfielder in their disappointing one game season he played every match for the year and won his second Best and Fairest.

In 2014 Melbourne traded for and drafted more midfielders to help him avoid playing as a lone hand, but he remained one of his side's most consistent players. He appeared in every game again, meaning that he'd only missed one match in five seasons. At the end of the season he won his third consecutive Best and Fairest award.

Jones played every game again in 2015, and was once more one of his side's best players. His run of consecutive Best and Fairest awards ended at three but he still finished fifth in the award. In 2016 he was ever present in the side and played another consistent season in the midfield.

In 2017 he began sharing the captaincy with Jack Viney, and suffered his first ever injury interrupted season. After playing all but one game in the previous seven years a quad injury caused him to miss six games late in the year. He returned to playing every game in the season again in 2018, including his side's three finals. He played all 22 games in 2019 but began to be edged out of the midfield, and in the second half of the season was usually used in defence. The disappointing year saw Jones miss Brownlow Medal votes for the first time since 2008. His only appearing in eight games in 2020, and another eight games in 2021, reaching 300 games. He retired at the end of the year, shortly before the Grand Final.

Played for Mt. Eliza in 2023.

His brother Zak was drafted by the Sydney Swans in the 2013 Draft and debuted in mid-2014 before later playing for St Kilda.
