Koop began his career at South Melbourne, playing 15 games in three seasons, before joining SANFL side Woodville in 1982 where he remained until the end of 1984.

He joined North Melbourne in 1985 via one practice match at Sandringham which the Roos had engineered to cut down on a substantial transfer free being negotiated between North and the SANFL side.

He played just two games in his first season after being sidelined with a hernia, and three in his second. The Kangaroos offered him to the newly formed Brisbane Bears at the end of 1986 after he won the North reserves best and fairest, but when they didn't take the offer Melbourne stepped in and got two seasons out of the 26-year-old. He had been linked to VFA sides Sandringham and Springvale before the 1987 season but decided to have another shot at VFL football.

After 17 games in his first season, Koop dropped out of favour in 1988. He played seven games but was dropped for the Preliminary Final win and subsequently missed the Grand Final.

His 1989 season was ruined by injury, after hurting his knee in the pre-season he returned for two Reserves games early in the year then had to undergo surgery. He didn't play another senior game despite remaining on the list in 1989. After he was delisted at the end of that year, Koop rejoined Spingvale as a playing assistant coach. He remained there through to 1994.

In 2003 he was coach of Frankston YCW, and in 2008 Cranbourne. In 2011 Cranbourne went through the season undefeated to win the premiership but he was sacked in August 2013. He coached Dromana in 2014 and 2015 until leaving the club at the end of that year.
