Drafted by Collingwood with pick #18 in the 2012 National Draft, the ruckman was nominated for the Rising Star award in 2013. He was the Magpies' Best and Fairest in 2018 and 2019, and an All Australian in each season. At the end of 2019 he signed a seven year contract extension with Collingwood, but failed to recapture his peak form before an injury riddled 2022 where he was restricted to six games. With the Magpies requiring salary cap relief at the end of that year, Grundy was traded, with Collingwood continuing to play a significant amount of his salary.
Grundy began the year in tandem with fellow All Australian ruckman Max Gawn, but the pair were unable to regularly impact the scoreboard while playing together. After appearing in the first 16 games of the year, including three weeks as the side's lone ruck while Gawn was injured, Grundy was dropped with the intention of improving his forward play with VFL affiliate Casey. Recalled for one game in Round 22, Grundy was dropped again immediately after an overlooked for the rest of the season. He was linked to Port Adelaide before requesting a trade to Sydney, who exchanged 2023 National Draft selection #46 and their 2024 National Draft second round selection to secure him.
His brother Riley was drafted by Port Adelaide in 2018 but didn't play a game.
