Debuted with Claremont in 1999, and was added to the Fremantle rookie list a year later. Delisted after one season, he continued playing with Claremont until the end of 2002. Coached by future Melbourne defensive coach Mark Riley, the Demons rookie listed Carroll at the end of 2002 on Riley's recommendation. He debuted in 2003, but found it hard to cement a spot in the side. It took until late 2005 to become an established part of the Demon defence.
Carroll's improvement during 2006 left him touted as a mid-season chance for the All Australian squad, but conceding eight goals to Brisbane's Daniel Bradshaw in Round 14 did him no favours. While he dropped away in the second half of the year it was still a career-best season.
He began to have disciplinary issues in the 2007 off-season, when he was involved in two fights alongside teammate Brock McLean during a European holiday. He was suspended for the first two games of the pre-season.
Already on thin ice at the end of 2008, an incident with teammate Ben Holland during post-season celebrations sealed his fate. Holland suffered facial injuries after trying to put Carroll into a taxi, and though the club denied reports that was pushed or punched, Carroll's time was up and he was delisted with a year to go on his contract. St Kilda considered drafting him, but when they passed he returned the WAFL. In 2010 he played for St Kilda City.
Carroll's brother Trent played 78 games for Fremantle and West Coast.
