Gillies debuted for Geelong as a key position defender in 2009, playing six AFL games and winning their VFL best and fairest. He failed to play a match the next year and added just two more in 2011. Despite interest in a trade from Hawthorn he was retained by the Cats, but was delisted after five more games in 2012.
He trained with Melbourne in the 2013 pre-season before being signed as a free agent. Given his chance at the start of the season because of injuries, Gillies only played two games, both thrashings, by an average of 113.5 points. He was dropped and never returned, and despite a late season conversion to the forward line at Casey, Gillies was delisted after his first year at the club.
Gillies joined Geelong Football League side St Mary's for the 2014 season, where he remained through the end of 2018 before joining Bannockburn.
