Drafted by Fremantle with selection #1 in the 1995 National Draft, White was restricted to six games by facial fractures in his first season, and a ruptured spleen in 1997 cost him more game. He played 32 times for the Dockers before requesting a trade back to Victoria. Melbourne beat St Kilda for his services, though it later emerged that the Demons had gone over the salary cap in order to sign White, and in compensation were forced to give a draft pick to Fremantle as compensation.

Once he reached Melbourne, an injury-free White immediately impressed, playing all 25 games for the year and kicking an equal career high of four goals in the round 5 victory over Port Adelaide. Surgery for minor cartilage damage to his knee from a pre-season game kept White out of the early rounds of 1999. He returned to play 19 games for the year, but the injury contributed to a drop in form.

White returned bulked up in 2000 but was forced to play in the forward line early in the year due to shin problems. As he gradually regained fitness and moved back into the middle, White was one of his side's best in their run to the Grand Final, and was rewarded with second place in the Best and Fairest. Injuries curtailed his influence in 2001, and though he only missed one game and still finished fifth in the Best and Fairest, chronic shin issues forced White to leap off his wrong foot at ruck contests.

At the end of 2002, a season where he had shown form back to his best, White signed a contract extension to tie him to the club until the end of 2005. In 2003, though he was again troubled by shin problems after an early season knee injury failed to heal. In a poor side, White often found himself eclipsed in the ruck by newcomer Darren Jolly. He returned to form in 2004, finishing equal eighth in the Brownlow Medal and winning All Australian selection.

White ended 2005 with serious facial injuries after being accidentally kicked during the 2005 Elimination Final, and turned back a number of lucrative offers to sign a new contract with the Demons. White played his last finals campaign in 2006. As the wheel fells off at Melbourne the next year, White's position started to come under threat for the first time. At the end of 2008 he wasn't offered a new contract. He was linked to both Carlton and Sydney for 2009 but wasn't drafted and joined AFL Queensland side Redland Bombers. White played one season for them before retiring and joining Gold Coast as a coach.
