The youngest of the Dunbar brothers, Hugh avoided the injury problems of Edgar and Harold and ended up having the most productive career. He might never have been signed at all, but on a visit to the Dunbar family property secretary Andrew Manzie saw him at work and when his brothers vouched that he could play "a bit", Manzie signed him and was rewarded with the best of the bunch.

In 1925 Dunbar played for the VFL against a Ballarat League side.

Described by Bert Chadwick as one of the best ruckmen in the game, Dunbar missed the first four games of 1926 after a pre-season training mishap but returned to play centre-half back in the premiership side. After the match his teammates celebrated at Dunbar's Bentleigh milk bar.

His next two years were less productive due to injury, with acute appendicitis ruining the end of his 1927 campaign and he left Melbourne at the end of 1928. He had been appointed coach of Bentleigh before the 1928 season but ended up staying with Melbourne.

He last season at Melbourne was affected by a leg injury which kept him out for half the year, and at the end of the season he left to join VFA side Brighton as captain/coach. In 1930 he returned to the VFL for three games at St. Kilda before joining Ormond as coach. He became an umpire in 1931 and was on the league umpiring panel but never took charge of a senior game. The next year he played for Kyneton and was runner-up in the league's best and fairest award.

He later coached Ormond in at least 1937 and 1938. His son Graham played with the Thirds in 1954.
